Italian Seitan Sloppy Joes

INGREDIENTS

  • Homemade Burger Buns
  • 4 tablespoons olive oil
  • 2 1/2 cups Italian seitan (chopped in small pieces)
  • 2 tablespoons Sofrito
  • 1/2 teaspoon salt (or more to taste)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 cup red onion (chopped)
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 3 fresh oregano leaves
  • 1/8 teaspoon paprika
  • 1/4 cup green bell pepper (chopped in small pieces)
  • Vegan cheddar sliced cheese
  • Vegan mayo

INSTRUCTIONS

  • Add olive oil to a medium size pan over medium heat
  • Add Italian seitan, sofrito, seasonings, tomato sauce, tomato paste, oregano, onions and peppers and stir.
  • Cook for 15-20 minutes on medium heat.
  • Remove from heat.
  • Add mayo, cheese and seitan to the buns.
  • Serve with a side of salad and sauerkraut.
